Vegan Chocolate Brownies

These brownies are super easy and delicious and taste amazing warmed up with vegan ice cream or yoghurt!



I was wanting to use up some left over Easter eggs and I thoughts what's better than chocolate brownies. 

Ingredients 
5 tablespoons of melted coconut oil 
200g dark chocolate 
170g self-raising flour
180g caster sugar 
2 tablespoons of cocoa powder 
250ml of soya or oat milk 

Pre-heat the oven to 180ºC/350ºF/gas 4. 

Firstly, melt the dark chocolate. I usually do this in a glass bowl over a saucepan of simmering water on the hob. 

Then mix all the dry ingredients in a bowl and then add the coconut oil, soya milk and then the melted dark chocolate and mix until smooth. 

Pour the mixture into a baking tin lined with grease-proof paper and a little oil and bake in the oven for 20-25 minutes (until the top is cooked but still gooey on the inside). Leave to cool before turning it out onto a cooling rack and cutting into slices.
